Pepper Sauce AKA Caribbean Salsa

Pepper sauce straight from the heart of the Caribbean, not for the faint hearted.
(thanks Frannie) I know you are probably thinking steak with pepper sauce but it is nothing like it! It takes me back to a time when I met this rangy, just gorgeous; pale blue eyes, great in bed, but one hell of temper.

Pepper Sauce
10 + habaneros or scotch bonnet peppers or birds eye chillies
2 cloves garlic
Coriander root
Green mango or green papaya, carrot if you can’t find the first two
1 tsp of sugar or to taste
1 tsp mustard
optional add a bit of fish sauce and tamarind sauce

The staple
Apple cider vinegar but you can use any good quality vinegar….just enough to bring it all together!

Baba ganoush

So my partner had grown some eggplants and i thought whats easy and yummy, baba ganoush with toasted turkish bread of course.

eggplant roasted till soft
half a freshly squeezed lemon
dry roasted fennel and cumin seeds about a teaspoon then crushed
3 garlic gloves crushed
1 tbsp of flat leaf parsley
1 tbsp tahini
seasoning of course

Hand mix with a fork altogether.

Delicious!
